I just have to share recipes that I find I love in hopes that you may love them too. I had never made enchiladas before out of some sort of fear, but this recipe looked so easy. Check it out; they look pretty tasty.
If you're lucky enough to live in Laredo (wink, wink), you must make these recipes using Sandy's tortillas. Check the refrigerated section of your grocery store for a similar product.
The next one to try is this sweet pork taco recipe. No pictures, just positive reviews. I made half the recipe which is plenty. I also did not mix the dressing with the cold slaw.
