First things first, Avery now has two teeth. I guess once they start, they don't slow down. She also is sitting up for short periods of time on her own. I'll have to post some pictures next time since she is currently trying to go to sleep, or trying to get us to let her stay up, depending on how you look at it.
I was thinking tonight that I always share recipes for dessert, so I needed to mix things up. I cooked one of my two favorite meals tonight for dinner. More on number two later. I love this recipe for several reasons. First, it starts with a rotisserie chicken. Don't you just love it when someone else does the hard part? Second, it only uses half of the chicken, so you have left overs to make chicken salad or whatever. You can also freeze the leftover chicken to make this recipe again later. Third, it is an unusual combination of delicious flavors. So here goes.
Honey-Jalapeno Chicken with Sesame Noodles
6-8 oz spaghetti noodles
1 jalapeno, seeds removed
1/3 cup honey
1/4 cup chopped fresh cilantro
1/2 tsp salt
1/2 tsp pepper
1 Tbsp water
2 tsp olive oil
1/2 rotisserie chicken, shredded
1 1/2 Tbsp soy sauce
1 tsp sesame oil
1 chopped scallion, green part only
Cook noodles, drain, and set aside.
In a blender or food processor, combine jalapeno, honey, cilantro, salt, and pepper and puree until smooth. Add water to the mixture. Pour the 2 tsp olive oil into a preheated skillet. Add the shredded chicken and the blended sauce. Cook until heated through.
Combine cooked noodles, soy sauce, sesame oil, and scallions. Toss and transfer to a serving bowl. Pour heated chicken and sauce over noodles. Enjoy!
